Method

Step-by-Step Instructions
  1. Start by slicing your chicken breast into thin strips and cutting the red, yellow, and green bell peppers into bite-sized pieces. Dice the large yellow onion and mince the garlic cloves.
  2. In your crockpot, pour half of the salsa at the bottom to create a flavorful base.
  3. Next, layer half of the sliced bell peppers and onions over the salsa in your crockpot. Then, sprinkle the minced garlic on top.
  4. Now, evenly spread the sliced chicken breast over the vegetables. Sprinkle the fajita seasoning and chili powder on top of the chicken.
  5. Pour the remaining salsa over the chicken, followed by the rest of the sliced peppers and onions.
  6. Squeeze fresh lime juice over the top of the layered ingredients.
  7. Cover your crockpot and cook on low for 6-8 hours or on high for 3-4 hours.
  8. Once cooked, remove the lid and use two forks to shred the chicken directly in the crockpot.
  9. Set the crockpot to the warm setting until you’re ready to serve.
