- Preheat your oven to 425°F (220°C). Prepare your work surface with a light dusting of flour.
- Roll out the thawed puff pastry until about 1/8-inch thick. Cut out eight circles, each approximately 5 inches in diameter.
- Place the pastry circles on a baking sheet lined with parchment paper. Add about 2 tablespoons of goat cheese in the center of each circle, then sprinkle with salt, pepper, and Herbs de Provence.
- Sprinkle chopped California walnuts over the goat cheese layer on each tart and drizzle honey over the walnuts.
- Whisk together the egg with a teaspoon of warm water. Brush the egg wash around the borders of each tart.
- Bake in the preheated oven for about 20 minutes until puffed and golden brown.
- Let the tarts cool slightly, then garnish with fresh thyme and an extra drizzle of honey before serving.
