Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C). Prepare your work surface with a light dusting of flour.
  2. Roll out the thawed puff pastry until about 1/8-inch thick. Cut out eight circles, each approximately 5 inches in diameter.
  3. Place the pastry circles on a baking sheet lined with parchment paper. Add about 2 tablespoons of goat cheese in the center of each circle, then sprinkle with salt, pepper, and Herbs de Provence.
  4. Sprinkle chopped California walnuts over the goat cheese layer on each tart and drizzle honey over the walnuts.
  5. Whisk together the egg with a teaspoon of warm water. Brush the egg wash around the borders of each tart.
  6. Bake in the preheated oven for about 20 minutes until puffed and golden brown.
  7. Let the tarts cool slightly, then garnish with fresh thyme and an extra drizzle of honey before serving.
