Step-by-Step Instructions for Gougères
- Preheat your oven to 425°F (220°C) and line two baking sheets with parchment paper.
- Combine 1 cup of water, 1/2 teaspoon of salt, and 1/2 cup of unsalted butter in a saucepan. Heat until boiling and the butter has melted.
- Stir in 1 cup of all-purpose flour into the boiling mixture until a smooth dough forms. Cook for about 1.5 minutes.
- Let the dough cool slightly, then add 4 eggs one at a time, mixing well after each addition. Stir in nutmeg, ground pepper, and 1 cup of gruyère cheese.
- Transfer the dough into a piping bag and pipe 1-inch mounds on the prepared baking sheets; sprinkle more gruyère cheese on top.
- Bake the gougères at 425°F for 10 minutes, then reduce the temperature to 375°F (190°C) without opening the door. Bake for another 20–25 minutes.
- Let the gougères cool in the oven with the door slightly ajar for about 15 minutes.
