Ingredients
  

For the Stir-Fry
  • 2 medium Zucchinis can substitute with yellow squash
  • 1 medium Onion or shallots
  • 3 cloves Garlic fresh preferred, powdered can work in a bind
  • 2 stalks Green Onions or chives
  • 2 tablespoons Saewoojeot (Salted & Fermented Shrimp) use fish sauce or soy sauce for vegan option
  • 1 tablespoon Maple Syrup can substitute with honey or agave syrup
  • 1 teaspoon Gochugaru (Korean Red Pepper Flakes) or fresh jalapeño
  • 1 tablespoon Cooking Oil canola or vegetable oil preferred
For Garnish
  • 2 tablespoons Sesame Seeds toasted for extra flavor
  • 1 teaspoon Sesame Oil for drizzling

Method
 

Preparation Steps
  1. Begin by washing and drying the zucchinis. Cut them in half lengthwise, then slice each half into half-moons about 1/4" thick.
  2. Heat a wok or large skillet over medium-high heat and add a tablespoon of cooking oil. Toss in the sliced onions and minced garlic. Sauté for about 2 minutes until the onion becomes translucent.
  3. Incorporate the sliced zucchini into the pan with the onions and garlic. Stir-fry over high heat for approximately 5 minutes, until the zucchinis become tender-crisp.
  4. Reduce the heat slightly and stir in the saewoojeot, maple syrup, and gochugaru. Mix for about 2-3 minutes.
  5. Remove from heat, transfer to a serving plate, sprinkle with toasted sesame seeds and drizzle with sesame oil.
