For the Ribs
  • 2 pounds Pork Ribs (Baby Back or Spare Ribs) Make sure to remove the silver skin for optimal tenderness.
For the Topping
  • 1/2 cup Roasted Peanuts (Chopped) Can be omitted if there are nut allergies.
  • 1/4 cup Cilantro (Chopped) Optional if you can’t find any.

Method
 

Step-by-Step Instructions for Sweet Chili Ribs
  1. In a bowl, combine the sweet chili sauce, red curry paste, fish sauce, and lime juice. Whisk until smoothly blended. Generously brush this marinade over the pork ribs, cover with plastic wrap, and refrigerate overnight.
  2. On cooking day, heat a medium saucepan over medium heat and add the remaining sweet chili sauce, peanut butter, red curry paste, fish sauce, and lime juice. Stir constantly for 2-3 minutes until warm and creamy.
  3. Remove the marinated ribs from the fridge and place them vertically in the slow cooker. Cook on low for 6-8 hours until tender.
  4. Preheat your oven’s broiler to high. Transfer ribs onto a baking sheet lined with foil. Brush with half of the BBQ sauce and broil for 3-5 minutes.
  5. Remove the ribs from the oven, let them rest for a few minutes, then sprinkle with chopped peanuts and cilantro. Serve with remaining BBQ sauce on the side.
