Step-by-Step Instructions

  2. Wash and peel the sweet potatoes, then slice them into ¼-inch thick rounds.
  3. Drizzle olive oil over the sweet potato rounds and season with salt and pepper. Toss to coat, then arrange on the baking sheet.
  4. Roast for 20–25 minutes, flipping halfway, until tender and caramelized.
  5. Top each round with a slice of brie cheese and return to the oven for 5 minutes to melt.
  6. Sprinkle with cranberries and toasted pecans. Garnish with rosemary or thyme before serving warm.
