Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  3. In a large bowl, beat the softened butter with the brown sugar and granulated sugar for about 2 minutes.
  4. Add the egg yolks, vanilla extract, and red gel food coloring to the butter mixture and mix for another 2 minutes.
  5. Gradually add the dry ingredients to the wet ingredients and mix gently until just combined.
  6. Fold in the white chocolate or white chocolate chips gently.
  7. Using a cookie scoop, portion out the dough into 18 balls and place them on baking sheets.
  8. Bake for 10-12 minutes; 10 for soft centers, 12 for crisp edges.
  9. Remove from the oven, cool on the sheets for 5 minutes, then transfer to a cooling rack for another 5.
