- Preheat your oven to 400°F (200°C) and line two baking sheets with parchment paper.
- Roll out the thawed puff pastry on a lightly floured surface until about ¼ inch thick.
- Using a sharp round cutter, cut out 2-inch circles (approximately 24).
- Create a gentle well in the center of each pastry circle.
- Spoon about 1 tablespoon of goat cheese into each indentation.
- Transfer to the preheated oven and bake for 8–10 minutes until golden brown.
- Remove from the oven, drizzle with honey, and finish with fresh thyme.
