Ingredients
  

For the Meatloaf
  • 1 lb Ground Chicken Can substitute with ground turkey for a leaner option.
  • 2 tbsp Olive Oil Avocado oil works well as a substitute.
  • 1 medium Onion Finely diced.
  • 3 cloves Garlic Minced.
  • 1 cup Seasoned Breadcrumbs Use unseasoned with added herbs if needed.
  • 1/2 cup Milk Can be swapped with chicken broth for a dairy-free option.
  • 3/4 cup Parmesan Cheese Grated for easy mixing.
  • 1 large Egg
  • 1/4 cup Fresh Parsley Substitute with basil or thyme if desired.
  • 1 tbsp Italian Seasoning
  • 1 tsp Salt
  • 1 cup Mozzarella Cheese Strings Creates a cheesy surprise in the center.
For the Topping
  • 1 cup Marinara Sauce Adds moisture and flavor.
  • 1/2 cup Panko Breadcrumbs For a crunchy topping.
  • 2 tbsp Butter Melted.
  • 1/2 cup Shredded Mozzarella Cheese For additional cheesiness on top.

Method
 

Cooking Steps
  1. Preheat your oven to 200°C (400°F) and line a baking sheet with foil.
  2. In a skillet heated to medium, add olive oil, diced onion, and minced garlic. Sauté for about 3-5 minutes until fragrant.
  3. In a large mixing bowl, combine ground chicken, cooled sautéed onion and garlic, breadcrumbs, milk, Parmesan cheese, egg, parsley, Italian seasoning, and salt. Mix gently.
  4. Shape about two-thirds of the mixture into a loaf on the prepared baking sheet. Create a well in the center and fill it with mozzarella cheese, then cover with the remaining mixture.
  5. Spread marinara sauce over the top of the meatloaf.
  6. Bake for approximately 45 minutes until firm and cooked through.
  7. Mix panko breadcrumbs, melted butter, and Parmesan cheese in a bowl for topping. Set aside.
  8. Remove meatloaf from the oven, sprinkle shredded mozzarella and the panko mixture on top, and return to the oven for an additional 15-20 minutes.
  9. Let the meatloaf rest for about 10 minutes before slicing.
