Marinade Preparation
- In a large mixing bowl, whisk together minced garlic, fresh lemon juice, and extra virgin olive oil.
- Add ground cumin, sweet paprika, ground coriander, ground cinnamon, freshly ground black pepper, and sea salt. Mix until well combined.
Marinating the Chicken
- Pat the chicken thighs and drumsticks dry with paper towels.
- Add the chicken pieces to the marinade and coat thoroughly.
- Cover with plastic wrap and refrigerate for at least 2 hours.
Cooking
- Preheat the oven to 220°C (425°F).
- Thinly slice the onion and spread it across the bottom of a baking dish.
- Place the marinated chicken pieces skin-side up over the layer of onions.
- Roast the chicken for 35-40 minutes, until the skin is crispy and golden brown.
- Check internal temperature has reached 75°C (165°F).
Finishing Touches
- Remove from the oven and cover loosely with foil. Let it rest for 5-10 minutes.
- Transfer the chicken onto a platter, garnish with parsley, and serve with lemon wedges.
