Ingredients
  

For the Marinade
  • 1 kg Bone-in, skin-on chicken thighs and drumsticks Provides moisture and flavor.

  • 80 ml Fresh lemon juice From about 2 large lemons.
  • 60 ml Extra virgin olive oil Can substitute with another high-quality oil.
  • 2 tsp Ground cumin Adds warm, earthy flavor.
  • 2 tsp Sweet paprika Contributes mild sweetness.
  • 1 tsp Ground coriander Enhances the complexity of the spices.
  • 0.5 tsp Ground cinnamon Use sparingly to avoid overpowering other flavors.
  • 0.5 tsp Freshly ground black pepper For seasoning; adjust to taste.
  • 1 tsp Sea salt Essential for flavor.
For Serving
  • 1 large Onion, thinly sliced Enhances moisture.
  • 1 large Lemon wedges Adds freshness upon serving.
  • 1 handful Fresh flat-leaf parsley, chopped For garnish.

Method
 

Marinade Preparation
  1. In a large mixing bowl, whisk together minced garlic, fresh lemon juice, and extra virgin olive oil.
  2. Add ground cumin, sweet paprika, ground coriander, ground cinnamon, freshly ground black pepper, and sea salt. Mix until well combined.
Marinating the Chicken
  1. Pat the chicken thighs and drumsticks dry with paper towels.
  2. Add the chicken pieces to the marinade and coat thoroughly.
  3. Cover with plastic wrap and refrigerate for at least 2 hours.
Cooking
  1. Preheat the oven to 220°C (425°F).
  2. Thinly slice the onion and spread it across the bottom of a baking dish.
  3. Place the marinated chicken pieces skin-side up over the layer of onions.
  4. Roast the chicken for 35-40 minutes, until the skin is crispy and golden brown.
  5. Check internal temperature has reached 75°C (165°F).
Finishing Touches
  1. Remove from the oven and cover loosely with foil. Let it rest for 5-10 minutes.
  2. Transfer the chicken onto a platter, garnish with parsley, and serve with lemon wedges.
