  • 1 clove Garlic minced or grated
  • 1 tablespoon Dijon Mustard yellow mustard works too
  • 1 teaspoon Sugar optional, to taste
  • Salt and Black Pepper to taste
  • 1 teaspoon Dried Italian Herbs or fresh basil/oregano
Salad Ingredients
  • 7 oz Leftover Ham or salami/chicken/turkey
  • 7 leaves Cos or Gem Lettuce or arugula/spinach
  • 1 cup Cherry Tomatoes or chopped tomatoes
  • 1 cup Mini Mozzarella Balls or feta cheese
  • ½ cup Green Sicilian Olives or any olives
  • ½ cup Fire-Roasted Red Peppers or fresh bell peppers
  • cup Pepperoncini or Greek golden peppers
  • ¼ small Red Onion or sweet onion/shallots
  • 1.5 cups Canned Chickpeas drained
  • ⅓ to ½ cup Grated Parmesan Cheese omit for dairy-free

Method
 

Preparation
  1. In a small bowl, whisk together the dressing ingredients until smooth and emulsified, about 1-2 minutes.
  2. Chop the ham, lettuce, tomatoes, red onion, olives, and red peppers into bite-sized pieces.
  3. In a large mixing bowl, combine the chopped ingredients with chickpeas and mini mozzarella balls. Toss gently.
  4. Drizzle the prepared dressing over the salad and toss gently to coat.
  5. Serve immediately for optimal freshness.
