Ingredients
  

  • 1 lb ground beef preferably 80/20
  • 1 small onion finely grated
  • 3 cloves garlic minced
  • ½ cup chopped fresh parsley
  • 2 tbsp chopped fresh mint optional
  • 1 tsp ground allspice
  • ½ tsp ground cinnamon
  • ½ tsp ground black pepper
  • 1 tsp salt
  • ½ tsp cayenne pepper optional, for heat
  • Skewers (metal or soaked wooden ones

Method
 

  1. In a large bowl, combine ground beef, grated onion, garlic, parsley, mint, and all spices. Mix well using your hands until fully combined.
  2. Divide the mixture into 6–8 portions. Shape each into a long oval or cigar shape around the skewers, pressing firmly to stick.
  3. Preheat a grill or skillet over medium-high heat.
  4. Grill the kafta skewers for about 4–5 minutes per side, turning once, until fully cooked and charred on the edges.
  5. Serve hot with pita bread, tahini sauce, or a fresh cucumber-tomato salad.

Notes

  • You can substitute beef with lamb or a mix of both for a deeper flavor.
  • Make sure not to overmix the meat to keep the kafta tender.
  • These skewers can also be baked at 400°F (200°C) for about 15-20 minutes, flipping halfway.
  • To make ahead, shape the kafta and refrigerate for up to 24 hours before cooking.
