- In a mixing bowl, combine ground pork, well-fermented kimchi, diced yellow onion, minced garlic, and grated ginger.
- Add soy sauce, rice wine (if using), a beaten egg, sesame oil, salt, and pepper. Mix until well incorporated.
- Cover and let marinate in the refrigerator for at least 20 minutes.
- Take a dumpling wrapper, moisten the edges, and place a tablespoon of the filling in the center.
- Fold the wrapper in half, seal edges tightly, and place assembled dumplings on a parchment-lined tray.
- Heat a non-stick skillet over medium-high heat with a splash of vegetable oil.
- Pan-fry arranged dumplings until golden brown, then add 1/4 cup cold water and steam for 7-8 minutes.
- Remove the lid and let them crisp for an additional minute before transferring to a serving plate.
- Optionally sprinkle with black sesame seeds and green onions before serving with dipping sauces.
