Method
 

Step-by-Step Instructions
  1. Peel and shred 4-5 medium-sized fresh carrots into thin strips using a box grater or a mandoline.
  2. In a separate small bowl, whisk together 3 minced garlic cloves, 3 tablespoons of rice vinegar, and 2 tablespoons of sugar.
  3. Add 2 tablespoons of sesame oil and a pinch of red pepper flakes, whisking until well combined and sugar is dissolved.
  4. Pour the dressing over the shredded carrots and gently toss to coat.
  5. Cover and chill in the refrigerator for at least 15 minutes before serving.
  6. Garnish with freshly chopped cilantro or sliced green onions before serving.
