Step‑by‑Step Instructions
- Preheat your oven to 375°F (190°C).
- Slice your zucchinis thinly, about 1/4 inch thick. Sprinkle with salt and let them rest in a colander for 10 minutes.
- In a medium bowl, combine the ricotta cheese, dried basil, dried oregano, garlic powder, salt, and black pepper.
- Heat a tablespoon of olive oil in a large skillet over medium heat. Add zucchini slices and sauté for about 3-4 minutes.
- In a greased baking dish, pour a thin layer of marinara sauce. Layer with sautéed zucchini, half of the ricotta mixture, and mozzarella cheese. Repeat layers, finishing with marinara and mozzarella on top.
- Cover with aluminum foil and bake for 20 minutes. Then remove the foil and bake for an additional 5-10 minutes until cheese is bubbly and golden brown.
- Let the dish cool for a few minutes before serving. Garnish with fresh basil leaves.

Notes
Salting the zucchini reduces moisture. Watch the bake time to avoid over-browning. Experiment with different cheese blends for unique flavors. Allow the dish to cool for better slicing.
