While the eggs are cooking, warm the pancakes in a separate skillet or microwave until heated through.
To assemble the sandwich, place one pancake on a plate.
Layer with cooked bacon or sausage, followed by the cooked egg, and top with shredded cheddar cheese.
Drizzle with maple syrup and finish with the second pancake on top.
