Ingredients
  

  • 2 large pancakes leftover or freshly made
  • 2 large eggs
  • 4 slices of cooked bacon or sausage patties
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons maple syrup
  • Salt and pepper to taste
  • Butter or cooking spray for frying

Method
 

  1. In a skillet over medium heat, melt a small amount of butter or spray with cooking spray.
  2. Crack the eggs into the skillet and season with salt and pepper. Cook the eggs to your desired doneness (sunny-side up, over-easy, or scrambled).
  3. While the eggs are cooking, warm the pancakes in a separate skillet or microwave until heated through.
  4. To assemble the sandwich, place one pancake on a plate.
  5. Layer with cooked bacon or sausage, followed by the cooked egg, and top with shredded cheddar cheese.
  6. Drizzle with maple syrup and finish with the second pancake on top.
  7. Serve immediately while warm.
