Step-by-Step Instructions for Lemon Chicken Gnocchi
  1. Heat 2 tablespoons of olive oil in a large skillet. Season chicken breasts with salt and pepper, and sear for 5-6 minutes on each side until golden brown. Remove from skillet and let rest.
  2. In the same skillet, add olive oil and sauté minced garlic for 30 seconds. Stir in lemon zest and juice, simmer for 1 minute. Gradually whisk in heavy cream and let thicken for 3-4 minutes.
  3. Bring a large pot of salted water to a boil. Add gnocchi and cook for 2-3 minutes until they float. Transfer gnocchi to the sauce and toss gently.
  4. Slice the rested chicken and add back into the skillet with gnocchi and sauce. Stir to warm through for an additional 2-3 minutes.
  5. Taste and season with salt and pepper. Serve in bowls, garnished with freshly chopped parsley or basil.
