Step-by-Step Instructions
  1. In a mixing bowl, combine flour, sugar, and salt. Cut in cold butter until it resembles coarse sand. Stir in egg yolk and add cold water gradually until dough forms. Wrap and chill for 20-30 minutes.
  2. Preheat oven to 350°F (175°C). Roll out chilled dough and press into a tart or cake pan. Prick bottom with a fork. Bake for 12-15 minutes until lightly golden. Cool completely.
  3. In a saucepan, whisk together sugar, cornstarch, lemon zest, and egg yolks. Gradually whisk in milk, cook over medium heat until thickened. Remove from heat and mix in lemon juice, butter, and vanilla.
  4. Pour custard into cooled crust. Bake for 25-30 minutes until edges are set and center jiggles.
  5. Cool completely at room temperature. Slice and optionally dust with powdered sugar and garnish with lemon twists or berries.
