Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 eggs
  • 1 cup sugar
  • 1/3 cup sour cream
  • 1/2 cup vegetable oil
  • 2 tablespoons lemon zest
  • 1/4 cup lemon juice
  • 1 teaspoon vanilla extract
For the glaze:
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice

Method
 

  1. Preheat oven to 350°F and grease a loaf pan.
  2. In a bowl, combine flour, baking powder, baking soda, and salt.
  3. In another bowl, beat eggs and sugar until fluffy.
  4. Add sour cream, oil, lemon zest, juice, and vanilla. Mix well.
  5. Slowly mix in dry ingredients until just combined.
  6. Pour into pan and bake 45-50 minutes. Let cool.
  7. Whisk glaze ingredients and pour over cooled loaf.

Notes

  • Chill the loaf before glazing for a neater finish.
  • Store in the fridge for longer freshness.
