Step-by-Step Instructions
  1. In a mixing bowl, combine gelatin with boiling water. Stir until fully dissolved, about 2-3 minutes. Set aside to cool slightly.
  2. Peel and chop mangoes, blend into a smooth puree measuring 1 cup.
  3. In a saucepan, combine coconut milk, condensed milk, and dissolved gelatin mixture. Heat over low to medium heat, stirring until steaming but not boiling (3-5 minutes).
  4. Taste and adjust sweetness with sugar if necessary. For texture, consider small mango chunks in the mixture.
  5. Pour into serving bowls or molds, refrigerate overnight or for at least 4 hours to set.
  6. Once set, let sit for 5 minutes at room temperature before serving. Top with diluted condensed milk and fresh mango.
