Method
- Boil potatoes until fork-tender, about 12-15 minutes. Drain and cool.
- In a bowl, combine sour cream, mayo, salt, and pepper.
- Fold in potatoes, cheese, bacon, and green onions.
- Chill for at least 1 hour before serving.
Notes
- Add diced pickles for tang or jalapeños for heat.
- Best served cold or at room temperature.
