Ingredients
  

  • 2 lbs baby red potatoes halved
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped cooked bacon
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Method
 

  1. Boil potatoes until fork-tender, about 12-15 minutes. Drain and cool.
  2. In a bowl, combine sour cream, mayo, salt, and pepper.
  3. Fold in potatoes, cheese, bacon, and green onions.
  4. Chill for at least 1 hour before serving.

Notes

  • Add diced pickles for tang or jalapeños for heat.
  • Best served cold or at room temperature.
