Ingredients

  • 1 pound sausage rolls mild, spicy, or maple-flavored
  • 8 large eggs
  • 1 cup 2% milk or preferred milk alternative
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup shredded cheese cheddar, Monterey Jack, or a blend
  • 1 pound frozen tater tots

Method

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Cook the Sausage: Heat a skillet over medium heat. Add the sausage and break it into small pieces. Cook until no longer pink, then remove from heat and set aside.
  3. Prepare the Dish: Grease a 9x13-inch baking dish with cooking spray. Spread the cooked sausage evenly over the bottom of the dish.
  4. Make the Egg Mixture: In a large bowl, whisk together eggs, milk, garlic powder, salt, and black pepper.
  5. Assemble the Casserole: Pour the egg mixture over the sausage. Sprinkle the shredded cheese evenly on top. Add the frozen tater tots, arranging them in a single layer for a crispy topping.
  6. Bake: Place the casserole in the preheated oven and bake for 50 minutes or until the center is set and no longer jiggles.
  7. Rest and Serve: Remove from the oven and let the casserole rest for 5 minutes before slicing and serving. Enjoy!

Notes

  • Tater Tot Placement: Arrange the tater tots in a single layer for optimal crispiness. Do not submerge them in the egg mixture.
  • Cheese Variations: Experiment with different cheeses like pepper jack or mozzarella to customize the flavor.
  • Add Vegetables: Mix in diced bell peppers, onions, or spinach for added nutrients and color.
  • Spice It Up: Add a pinch of cayenne or crushed red pepper flakes to the egg mixture for a spicy kick.
  • Make Ahead: Assemble the casserole the night before, cover, and refrigerate. Bake fresh in the morning.
