Ingredients

  • 2 Tbsp Dijon mustard
  • 2 Tbsp lemon juice
  • 2 garlic cloves minced
  • 1 tsp dried rosemary or 4 fresh rosemary sprigs
  • Black pepper to taste
  • 2 boneless skinless chicken breast halves (4 oz each)

Method

  1. Prepare the Marinade – In a small bowl, whisk together Dijon mustard, lemon juice, minced garlic, rosemary, and black pepper.
  2. Marinate the Chicken – Place the chicken breasts in a dish or resealable bag and coat with the marinade. Let sit for at least 30 minutes (or up to 2 hours for deeper flavor).
Cook the Chicken – Choose one of the following methods:
  1. Grill: Preheat grill to medium-high heat. Cook for 5-7 minutes per side until the internal temperature reaches 165°F (75°C).
  2. Pan-Sear: Heat a skillet over medium heat. Cook for 6-7 minutes per side until golden brown and fully cooked.
  3. Oven-Bake: Preheat oven to 375°F (190°C). Bake for 20-25 minutes until cooked through.
  4. Rest & Serve – Let the chicken rest for 5 minutes before slicing. Serve with your favorite side dishes and enjoy!

Notes

  • For extra tenderness, marinate the chicken for up to 24 hours.
  • If using chicken thighs, adjust the cooking time as they take longer to cook than breasts.
  • Pair with roasted veggies, mashed potatoes, or a crisp green salad for a complete meal.
  • Store leftovers in an airtight container in the fridge for up to 4 days.
