Low-Carb Baked Broccoli Cheese Balls – Keto-Friendly!

These Baked Broccoli Cheese Balls are crispy on the outside, cheesy on the inside, and packed with nutritious broccoli! A healthy, oven-baked alternative to fried snacks, they make a perfect appetizer, snack, or side dish. Serve them with your favorite dip, and enjoy a delicious way to eat more veggies!

Ingredients
  

  • 2 cups broccoli florets steamed and finely chopped
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • ¾ cup breadcrumbs panko or regular
  • 2 eggs lightly beaten
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon paprika
  • 1 tablespoon olive oil for brushing

Method
 

  1. Preheat the Oven
  2. Set your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. Prepare the Mixture
  4. Steam the broccoli florets until tender, then chop finely.
  5. In a large bowl, mix broccoli, cheddar cheese, Parmesan, breadcrumbs, eggs, garlic powder, onion powder, salt, black pepper, and paprika.
  6. Stir until well combined.
  7. Shape the Balls
  8. Scoop about 1 tablespoon of mixture and roll it into a ball.
  9. Repeat with the remaining mixture and place the balls on the baking sheet.
  10. Bake to Perfection
  11. Lightly brush the balls with olive oil for extra crispiness.
  12. Bake for 20-25 minutes, flipping halfway, until golden brown.
  13. Serve & Enjoy
  14. Let them cool slightly before serving.
  15. Enjoy with your favorite dipping sauce!

Notes

Use Fresh or Frozen Broccoli – If using frozen, thaw and drain well.
Chop the Broccoli Finely – Helps the balls hold together better.
Extra Crunch? – Roll the balls in additional breadcrumbs before baking.
Want It Spicy? – Add a pinch of chili flakes or cayenne pepper.
Make-Ahead Friendly – Store unbaked balls in the fridge for up to 24 hours.
