Ingredients

  • 16 ounces linguine or spaghetti
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon chile powder ancho or chipotle work well
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon black pepper
  • 2 pounds boneless skinless chicken breasts
  • 4 tablespoons butter
  • 16 ounces heavy cream
  • 1/4 cup rough-chopped fresh parsley plus more for garnish

Method

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook linguine according to package instructions. Drain and set aside.
  2. Season the Chicken: In a small bowl, combine garlic powder, onion powder, chile powder, salt, and black pepper. Rub the seasoning evenly over the chicken breasts.
  3. Sear the Chicken: Melt 2 tablespoons of butter in a large skillet over medium-high heat. Cook chicken for 5-7 minutes per side, or until golden brown and cooked through (165°F internal temperature). Remove from the pan and let rest before slicing.
  4. Make the Sauce: In the same skillet, melt the remaining 2 tablespoons of butter. Add heavy cream, stirring constantly. Let the sauce simmer and thicken for about 3-4 minutes.
  5. Combine Everything: Toss the cooked pasta in the creamy sauce, ensuring it’s well coated. Slice the chicken and add it on top.
  6. Garnish and Serve: Sprinkle with fresh parsley and serve immediately. Enjoy!

Notes

    • For extra flavor, add grated Parmesan cheese to the sauce.
    • If the sauce is too thick, loosen it with a bit of reserved pasta water.
    • For a spicier kick, sprinkle red pepper flakes before serving.
    • Store leftovers in an airtight container for up to 3 days and reheat with a splash of milk or broth.
