- Combine flour, sugar, and salt in a bowl. Blend in butter and vanilla until crumbly. Press mixture in prepared pan and bake for 12-15 minutes.
- Whisk together mango puree, sugar, cornstarch, lemon juice, and salt in a saucepan. Cook over medium heat until thickened, about 5-7 minutes.
- Cool the mango mixture slightly, then whisk in the eggs and vanilla until smooth.
- Pour the filling over the crust and bake for 20-25 minutes until set.
- Let cool at room temperature, then refrigerate for 1-2 hours.
- Lift the bars from the pan using the parchment paper, slice into squares, and serve chilled.
