Step-by-Step Instructions for Mango Fried Rice
  1. Heat 2 tablespoons of sesame oil in a large frying pan over medium heat for about 1 minute.
  2. Add 1 diced onion, 2 minced garlic cloves, and 1 teaspoon of minced ginger to the hot oil; stir frequently for about 5 minutes.
  3. Toss in 1 diced red bell pepper and 1 can (drained) of chickpeas; sauté for 2-3 minutes.
  4. Add 4 cups of day-old jasmine rice, break apart clumps, then pour in 3 tablespoons of soy sauce and 1 tablespoon of rice vinegar; cook for 3-4 minutes.
  5. Lower heat to medium and gently fold in 1 cubed ripe mango; cook for another minute.
