- Preheat the oven to 425°F (220°C). Adjust one rack to the center and another for broiling.
- Pat the salmon filets dry with paper towels. Brush with olive oil and season with salt and pepper. Place skin-side down on a lined baking sheet.
- Roast the salmon for about 12 minutes or until it reaches an internal temperature of 135°F (57°C).
- In a small saucepan, combine maple syrup, brown sugar, and bourbon. Heat over medium heat, stirring until the sugar dissolves.
- Remove the salmon from the oven and drizzle the glaze over the top. Broil for 1-3 minutes until the glaze bubbles and caramelizes.
- Serve immediately with reserved glaze for dipping and your favorite roasted vegetables.
