Ingredients
  

For the Roasting Mixture
  • 4 cups Carrots cut into ¼” thick pieces
  • 3 cups Apples Honeycrisp or Braeburn, chopped into ½” cubes
  • 1 cup Onion diced into ½” pieces
  • 5 cloves Garlic or 1 tsp garlic powder
For the Coating
  • 2 tablespoons Olive Oil substitute with aquafaba for oil-free option
  • 3 tablespoons Maple Syrup
  • 2 tablespoons Stone Ground Dijon Mustard
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Thyme

Method
 

Directions
  1. Preheat your oven to 425°F (220°C).
  2. Core the apples and chop them into ½” cubes.
  3. Chop the carrots diagonally into ¼” thick slices.
  4. Dice the onion into ½” pieces and finely chop the garlic.
  5. In a mixing bowl, whisk together olive oil, maple syrup, Dijon mustard, salt, black pepper, and thyme.
  6. Add the carrots, apples, onion, and garlic to the bowl and toss thoroughly.
  7. Spread the mixture evenly on a metal sheet pan.
  8. Roast for 15 minutes, then flip ingredients and continue roasting for another 10-15 minutes.
