- Preheat your oven to 425°F (220°C).
- Core the apples and chop them into ½” cubes.
- Chop the carrots diagonally into ¼” thick slices.
- Dice the onion into ½” pieces and finely chop the garlic.
- In a mixing bowl, whisk together olive oil, maple syrup, Dijon mustard, salt, black pepper, and thyme.
- Add the carrots, apples, onion, and garlic to the bowl and toss thoroughly.
- Spread the mixture evenly on a metal sheet pan.
- Roast for 15 minutes, then flip ingredients and continue roasting for another 10-15 minutes.
