Ingredients

  • 3 cups white chocolate chips
  • 1 can 14 oz sweetened condensed milk
  • 1/4 cup unsalted butter
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 1 cup maraschino cherries drained and chopped
  • Pinch of salt

Method

Prepare the Pan:
  1. Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
Melt the Fudge Mixture:
  1. In a medium saucepan, combine white chocolate chips, sweetened condensed milk, and unsalted butter.
  2. Heat over medium-low heat, stirring constantly, until the mixture is smooth and fully melted.
Add Flavorings:
  1. Remove the saucepan from heat. Stir in almond extract, vanilla extract, and a pinch of salt.
Fold in Cherries:
  1. Gently fold in the chopped maraschino cherries, being careful not to overmix to prevent the cherry juice from bleeding.
Set the Fudge:
  1. Pour the mixture into the prepared pan and spread evenly with a spatula.
  2. Smooth the top and refrigerate for at least 4 hours, or until fully set.
Cut and Serve:
  1. Use the parchment overhang to lift the fudge out of the pan.
  2. Place it on a cutting board and cut into small squares. Enjoy!

Notes

  • Storage: Store the fudge in an airtight container in the refrigerator for up to two weeks.
  • Freezing: Wrap individual squares tightly and freeze for up to three months. Thaw in the fridge before serving.
  • Customization: Add a handful of chopped nuts or shredded coconut for extra texture.
  • Draining Cherries: Ensure cherries are thoroughly drained and patted dry to prevent excess moisture.
