Prepare the Pan:
- Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
Melt the Fudge Mixture:
- In a medium saucepan, combine white chocolate chips, sweetened condensed milk, and unsalted butter.
- Heat over medium-low heat, stirring constantly, until the mixture is smooth and fully melted.
Add Flavorings:
- Remove the saucepan from heat. Stir in almond extract, vanilla extract, and a pinch of salt.
Fold in Cherries:
- Gently fold in the chopped maraschino cherries, being careful not to overmix to prevent the cherry juice from bleeding.
Set the Fudge:
- Pour the mixture into the prepared pan and spread evenly with a spatula.
- Smooth the top and refrigerate for at least 4 hours, or until fully set.
Cut and Serve:
- Use the parchment overhang to lift the fudge out of the pan.
- Place it on a cutting board and cut into small squares. Enjoy!
