Ingredients
  

For the Chicken Marinade:
  • Boneless skinless chicken breasts or thighs, thinly sliced
  • Soy sauce
  • Cornstarch
For the Chow Mein Sauce:
  • Soy sauce
  • Oyster sauce
  • Sesame oil
  • Rice vinegar
  • Brown sugar
  • Cornstarch
  • Water
For the Stir-Fry:
  • Chow mein noodles cooked according to package instructions
  • Vegetable oil
  • Garlic minced
  • Fresh ginger minced
  • Bell peppers thinly sliced
  • Carrots julienned
  • Onion sliced
  • Cabbage shredded
  • Green onions chopped (for garnish)

Method
 

Marinate the Chicken:
  1. In a bowl, combine the sliced chicken with soy sauce and cornstarch. Mix well to coat the chicken evenly. Set aside to marinate while preparing the other ingredients.
Prepare the Chow Mein Sauce:
  1. In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, rice vinegar, brown sugar, cornstarch, and water until the cornstarch is fully dissolved. Set aside.
Stir-Fry the Chicken:
  1. Heat vegetable oil in a large wok or skillet over medium-high heat. Add the marinated chicken and stir-fry until it is golden brown and cooked through, approximately 5-7 minutes. Remove the chicken from the pan and set aside.
Stir-Fry the Vegetables:
  1. In the same pan, add a bit more oil if necessary. Add minced garlic and ginger, sautéing briefly until fragrant. Then, add the bell peppers, carrots, onion, and cabbage. Stir-fry the vegetables for 3-4 minutes until they are tender-crisp.
Combine and Serve:
  1. Return the cooked chicken to the pan with the vegetables. Pour in the prepared chow mein sauce and add the cooked noodles. Toss everything together thoroughly to ensure the noodles and ingredients are evenly coated with the sauce. Cook for an additional 2 minutes to heat through.

  • Customize Your Protein: Swap chicken for shrimp, beef, or tofu for a different variation.
  • Don’t Overcook the Noodles: They should be firm yet tender, as they’ll continue cooking in the stir-fry.

  • Storage & Reheating: Store in the fridge for up to 4 days. Reheat in a skillet with a splash of water to revive the texture.
