Ingredients
  

  • 1 can 15 ounces chickpeas, drained and rinsed
  • 1 can 15 ounces black beans, drained and rinsed
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/2 red onion finely chopped
  • 1/2 cup Kalamata olives pitted and sliced
  • 1/4 cup fresh parsley chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Method
 

  1. In a large mixing bowl, combine the chickpeas, black beans, cherry tomatoes, cucumber, red onion, Kalamata olives, and parsley.
  2. In a separate small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper.
  3. Pour the dressing over the bean mixture and toss gently to combine.
  4. Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve chilled or at room temperature, and enjoy!
