Ingredients
  

  • 2 cups celery thinly sliced
  • 1 cup cherry tomatoes halved
  • 1 cup Kalamata olives pitted and halved
  • 1/2 cup red onion thinly sliced
  • 1/4 cup fresh parsley chopped
  • 1/4 cup feta cheese crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Method
 

  1. In a large mixing bowl, combine the sliced celery, cherry tomatoes, Kalamata olives, red onion, and parsley.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined.
  3. Pour the dressing over the salad mixture and toss gently to coat all the ingredients evenly.
  4. Sprinkle the crumbled feta cheese on top and give the salad a final gentle toss.
  5. For best flavor, let the salad chill in the refrigerator for at least 30 minutes before serving.
