Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large, high-sided skillet over medium heat for 1-2 minutes until hot.
  2. Cut 1 pound of chicken thighs into bite-sized pieces and season with smoked paprika, oregano, salt, and pepper.
  3. Add the seasoned chicken to the hot skillet and cook for 10-15 minutes until browned and cooked through.
  4. In the same skillet, add 4 cups of spinach, half the cherry tomatoes, and 3 cloves of minced garlic and sauté for about 5 minutes.
  5. Stir in ½ cup of feta cheese, remaining cherry tomatoes, and juice of 1 lemon. Mix gently for 2-3 minutes.
  6. Return chicken to the skillet and heat everything through for an additional 2-3 minutes before serving.
