- Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned.
- Add onion and garlic, sauté until translucent.
- Stir in zucchini and tomatoes. Cook for 5–6 minutes until vegetables soften.
- Season with oregano, cumin, salt, and pepper.
- Finish with lemon juice and garnish with crumbled feta and parsley.
Notes
- Great served over couscous or rice, or in lettuce wraps.
- Add spinach or chopped kale for more greens.
- Use ground lamb for a richer Mediterranean flavor.
