Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 zucchini diced
  • 1 cup cherry tomatoes halved
  • 1/2 teaspoon oregano
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Juice of half a lemon
  • Crumbled feta and parsley for garnish

Method
 

  1. Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned.
  2. Add onion and garlic, sauté until translucent.
  3. Stir in zucchini and tomatoes. Cook for 5–6 minutes until vegetables soften.
  4. Season with oregano, cumin, salt, and pepper.
  5. Finish with lemon juice and garnish with crumbled feta and parsley.

Notes

  • Great served over couscous or rice, or in lettuce wraps.
  • Add spinach or chopped kale for more greens.
  • Use ground lamb for a richer Mediterranean flavor.
