Method
- Preheat oven to 400°F (200°C). Line a baking dish with parchment.
- In a small bowl, whisk olive oil, lemon juice, garlic, oregano, basil, salt, and pepper.
- Place salmon in the dish and brush with marinade. Top with tomatoes, olives, and onion.
- Bake for 12–15 minutes or until salmon flakes easily with a fork.
- Garnish with fresh parsley before serving.

- Serve with couscous, quinoa, or a green salad. Use foil packets for easy cleanup and grilling.
