Ingredients
  

  • 4 salmon fillets
  • 3 tablespoons olive oil
  • Juice of 1 lemon
  • 3 garlic cloves minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • ½ cup cherry tomatoes halved
  • ¼ cup kalamata olives sliced
  • ¼ cup red onion thinly sliced
  • Fresh parsley for garnish

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking dish with parchment.
  2. In a small bowl, whisk olive oil, lemon juice, garlic, oregano, basil, salt, and pepper.
  3. Place salmon in the dish and brush with marinade. Top with tomatoes, olives, and onion.
  4. Bake for 12–15 minutes or until salmon flakes easily with a fork.
  5. Garnish with fresh parsley before serving.

Notes

  • Serve with couscous, quinoa, or a green salad. Use foil packets for easy cleanup and grilling.
