Ingredients
  

Steak Marinade
  • 1 lb Sirloin Steak 1-inch thick cut
  • 2 tbsp Olive Oil
  • 3 cloves Garlic Cloves minced
  • 2 tbsp Lemon Juice
  • 1 tsp Dried Oregano
  • 1 tsp Dried Thyme
  • 1 tsp Salt
  • 1 tsp Pepper
Bowl Base
  • 2 cups Cooked Grains brown rice, quinoa, or cauliflower rice
Toppings
  • 1 cup Roasted Chickpeas optional
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber sliced
  • 1/2 cup Red Onion sliced
  • 1/2 cup Kalamata Olives pitted
  • 1/2 cup Feta Cheese crumbled
  • 1/4 cup Fresh Herbs parsley or dill
Tzatziki Sauce
  • 1 cup Greek Yogurt or coconut yogurt for dairy-free
  • 1/2 cup Grated Cucumber drained
  • 1 tbsp Honey optional

Method
 

Preparation
  1. In a medium bowl, combine olive oil, minced garlic, lemon juice, dried oregano, thyme, salt, and pepper for the marinade.
  2. Immerse the sirloin steak in the marinade, cover, and let marinate for at least 30 minutes.
  3. Prepare the tzatziki by mixing Greek yogurt, grated cucumber, minced garlic, lemon juice, and dill. Season and refrigerate.
  4. Whisk together olive oil, lemon juice, honey, minced garlic, and dried oregano for the vinaigrette.
Cooking
  1. Heat a skillet over medium-high heat and sear the marinated steak for 4-5 minutes on each side. Rest for 5 minutes.
  2. Slice the steak thinly against the grain.
  3. Assemble the bowl by layering cooked grains, sliced steak, and toppings.
  4. Drizzle with tzatziki sauce and vinaigrette; garnish with fresh herbs.
