For the Pasta
  • 2 cups elbow macaroni or penne gluten-free pasta can be used as a substitute
For the Corn Mixture
  • 2 cups sweet corn kernels fresh, frozen, or canned corn can be used
  • 1 whole jalapeño pepper adjust based on spice preference
  • 2 tablespoons butter olive oil can be used as a substitute
For the Dressing
  • ¾ cup mayonnaise vegan mayonnaise is an option
  • 1 tablespoon lime juice freshly squeezed is best
  • 1 teaspoon chili powder to taste
  • 1 teaspoon smoked paprika to taste
  • ½ teaspoon salt
  • ½ teaspoon black pepper
For the Toppings
  • ¼ cup chopped cilantro leaves can substitute with parsley
  • 1 cup crumbled cotija cheese can substitute with feta or omit for vegan

Method
 

Preparation Steps
  1. Cook the pasta according to package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. Melt butter in a skillet over medium heat, add corn and sauté for 8-10 minutes until charred.
  3. Sprinkle in chili powder and smoked paprika, stir, and let cool.
  4. In a mixing bowl, combine cooled pasta, charred corn, mayonnaise, lime juice, cotija cheese, cilantro, and jalapeño.
  5. Season with salt and pepper, mix well.
  6. Refrigerate for at least 30 minutes before serving.
