Ingredients
  

  • 2-3 pound beef tenderloin trimmed
  • 2 tablespoons olive oil
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 4 cloves garlic minced
  • 2 tablespoons fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • 2 tablespoons butter melted

Method
 

  1. Preheat oven to 450°F (230°C). Tie beef with butcher’s twine for even roasting.
  2. In a small bowl, mix garlic, herbs, salt, pepper, olive oil, and melted butter.
  3. Rub mixture all over the tenderloin.
  4. Place on a rack in a roasting pan and roast for 25–30 minutes for medium-rare (135°F internal temp).
  5. Rest for 10–15 minutes before slicing.
