Ingredients
  

For the Crust:
  • 1 and 1/2 cups digestive biscuits or graham crackers crushed
  • 1/3 cup melted butter
  • 2 tablespoons granulated sugar
For the Cheesecake Filling:
  • 16 ounces cream cheese softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
For the Caramel Layer:
  • 1 cup caramel sauce store-bought or homemade
  • A pinch of sea salt optional, for salted caramel
For the Chocolate Topping:
  • 3/4 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream

Method
 

Prepare the Crust:
  1. Mix crushed biscuits, melted butter, and sugar in a bowl until combined.
  2. Press the mixture firmly into the bottom of a springform pan.
  3. Chill in the refrigerator for 20 minutes.
Make the Cheesecake Layer:
  1. In a large bowl, beat cream cheese and sugar until smooth and fluffy.
  2. Add vanilla extract and continue to beat.
  3. In a separate bowl, whip heavy cream until stiff peaks form.
  4. Gently fold whipped cream into the cream cheese mixture.
  5. Spread the cheesecake filling evenly over the chilled crust.
  6. Refrigerate for at least 4 hours, or until set.
Add the Caramel Layer:
  1. Pour caramel sauce over the set cheesecake layer.
  2. Spread evenly and sprinkle with sea salt if desired.
  3. Chill for 30 minutes.
Prepare the Chocolate Topping:
  1. Heat heavy cream until hot but not boiling.
  2. Pour over chocolate chips and let sit for 1-2 minutes.
  3. Stir until smooth and glossy.
  4. Pour the chocolate ganache over the caramel layer and spread evenly.
  5. Refrigerate for an additional 1-2 hours until firm.
Serve:
  1. Carefully remove from the springform pan.
  2. Slice and enjoy your decadent Millionaire Cheesecake!
