Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, baking powder, and salt.
In a large bowl, cream the softened butter and granulated sugar together until light and fluffy.
Beat in the egg and vanilla extract until well combined.
Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Using a tablespoon, scoop the dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each scoop slightly with the back of a spoon.
Bake for 10-12 minutes or until the edges are lightly golden. Remove from the oven and let cool completely on a wire rack.
In a separate bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth.
Once the cookies are cooled, spread a layer of the cream cheese mixture on top of each cookie.
Top with assorted fresh fruit and garnish with mint leaves if desired.
