Ingredients
  

  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
  • 16 ounces cream cheese softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 1 cup fresh blueberries

Method
 

  1. Preheat the oven to 325°F. Line a muffin tin with paper liners.
  2. In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
  3. Press about 1 tablespoon of the mixture into the bottom of each muffin cup to form the crust.
  4. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
  5. Gradually add powdered sugar and vanilla extract, mixing until well incorporated.
  6. Add the eggs one at a time, mixing on low speed until just combined.
  7. Stir in lemon juice and lemon zest until smooth.
  8. Divide the cream cheese mixture evenly among the muffin cups, filling each about 3/4 full.
  9. Drop a few blueberries on top of each cheesecake.
  10. Bake for 18-20 minutes or until the centers are set but still slightly jiggly.
  11. Remove from the oven and let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  12. Refrigerate for at least 2 hours before serving.
