Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Prepare a baking sheet lined with parchment paper.
  2. In a mixing bowl, combine chopped strawberries, blueberries, sugar, cornstarch, cinnamon, and lemon zest. Stir gently and let sit for about 10 minutes.
  3. Roll out your pie crust to 1/8 inch thick. Cut into 4.5-inch circles using an upside-down bowl.
  4. Place about 1/4 cup of fruit filling in the center of each dough circle, leaving a generous border.
  5. Fold the edges of the crust up over the filling, pinching to secure the shape.
  6. Whisk the egg and brush the edges of each galette. Optionally sprinkle sugar over the crust.
  7. Bake for 25-30 minutes or until golden brown and filling is bubbly.
  8. Allow to cool on the baking sheet for about 10 minutes before serving.
