- Preheat your oven to 375°F (190°C). Prepare a baking sheet lined with parchment paper.
- In a mixing bowl, combine chopped strawberries, blueberries, sugar, cornstarch, cinnamon, and lemon zest. Stir gently and let sit for about 10 minutes.
- Roll out your pie crust to 1/8 inch thick. Cut into 4.5-inch circles using an upside-down bowl.
- Place about 1/4 cup of fruit filling in the center of each dough circle, leaving a generous border.
- Fold the edges of the crust up over the filling, pinching to secure the shape.
- Whisk the egg and brush the edges of each galette. Optionally sprinkle sugar over the crust.
- Bake for 25-30 minutes or until golden brown and filling is bubbly.
