  • 1-2 tbsp. milk Non-dairy milk works well.

For the Ganache
  • 6 oz. semi-sweet or dark chocolate chips Can substitute with white chocolate.

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a 9x13 inch baking pan with foil or parchment paper.
  2. Chop the unsweetened baking chocolate and butter into small pieces and melt them in the microwave.
  3. Beat together the eggs, sugar, and vanilla until pale and frothy. Gradually mix in the melted chocolate mixture, then add the flour and baking powder.
  4. Pour the brownie batter into the prepared pan and bake for 20-30 minutes until the edges are set.
  5. Make the peppermint frosting by beating together the softened butter, powdered sugar, peppermint extract, and milk.
  6. Combine the chocolate chips and butter for the ganache; heat until melted and smooth, then pour over the frosted brownies.
  7. Once the ganache has set, lift the brownies out of the pan, cut into squares, and serve chilled.
