  • 1 tablespoon Honey or maple syrup/agave nectar
  • 1 teaspoon Fresh Ginger finely grated; can use 1/2 teaspoon ground ginger
  • 1 clove Garlic minced
Optional Garnishes
  • Sesame Seeds for added crunch
  • Chopped Green Onions for garnish

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut the eggplant into 1-inch cubes, drizzle with olive oil, and season with salt and pepper.
  3. Spread the eggplant cubes on the prepared baking sheet and roast for 20–25 minutes, flipping halfway through.
  4. In a bowl, whisk together the miso paste, mirin, soy sauce, honey, ginger, and garlic.
  5. Brush the miso glaze over the roasted eggplant and return to the oven for an additional 5-7 minutes.
  6. Garnish with sesame seeds and chopped green onions before serving warm.
