Ingredients

For the Marinade
  • 1 medium Kiwi Acts as a natural meat tenderizer; don't let it sit too long.
  • 4 stalks Green Onions Adds fresh, mild onion flavor; substitute with ¼ onion if needed.
  • ½ cup Pineapple Juice Avoid using fresh pineapple in marinades as it can alter the texture.
  • ¼ cup Soy Sauce Opt for tamari or coconut aminos for a gluten-free alternative.
  • 2 tbsp Brown Sugar Feel free to use white sugar or maple syrup as substitutions.
  • 2 tbsp Sesame Oil Enhances richness, especially with toasted sesame oil.
  • 4 cloves Garlic Fresh garlic is key for authentic flavor.
  • 1 tbsp Ginger Fresh ginger adds warmth and zest.
For the Beef
  • 2 lbs Beef Short Ribs Choose boneless, cut into ½ inch thick strips.

Equipment

  • blender
  • Grill
  • Ziploc bag
  • meat thermometer

Method

Step‑by‑Step Instructions
  1. In a blender, combine one medium kiwi, four stalks of green onions, ½ cup of pineapple juice, ¼ cup of soy sauce, 2 tablespoons of brown sugar, 2 tablespoons of sesame oil, four cloves of garlic, and 1 tablespoon of fresh ginger. Blend until smooth to create the marinade.
  2. Place 2 pounds of beef short ribs into a Ziploc bag and pour the marinade over the meat. Seal the bag and let it marinate in the refrigerator for at least 2 hours or overnight for best results.
  3. Preheat your grill or air fryer to high heat, around 400°F (200°C). This ensures a nice char on the beef.
  4. Remove the marinated short ribs from the bag, letting excess marinade drip off. Grill for about 5 minutes on each side or until charred and internal temperature reaches 145°F (63°C).
  5. Optionally, grill pineapple slices for a sweet accompaniment during the last few minutes of cooking.
  6. Once cooked, remove the beef from the grill and let it rest before slicing. Serve hot, optionally with grilled pineapple slices.
