Ingredients
  

  • 1 cup vanilla protein powder plant-based or whey
  • 1/2 cup coconut flour
  • 1/2 cup almond butter or peanut butter for a richer flavor
  • 1/4 cup maple syrup or honey
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves optional for extra spice
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2-3 tablespoons orange juice for moisture
  • 1/2 cup shredded unsweetened coconut for coating

Method
 

  1. Combine Dry Ingredients – In a large mixing bowl, whisk together the protein powder, coconut flour, ginger, cinnamon, nutmeg, cloves, and salt.
  2. Mix Wet Ingredients – In a separate bowl, stir together the almond butter, maple syrup, vanilla extract, and orange juice until smooth.
  3. Form the Dough – Gradually add the wet mixture to the dry ingredients, stirring well until a thick, slightly sticky dough forms. If too dry, add a little more orange juice, one teaspoon at a time.
  4. Shape the Bites – Roll the dough into 1-inch balls using your hands or a small scoop.
  5. Coat with Coconut – Roll each ball in shredded unsweetened coconut for extra texture and flavor.
  6. Chill & Enjoy – Place the bites on a tray and refrigerate for at least 30 minutes before serving.

Notes

  • Store in an airtight container at room temperature for up to a week, or refrigerate for up to two weeks.
  • These bites can be frozen for up to three months—just thaw before eating.
  • Substitute almond butter with sunflower seed butter for a nut-free version.
  • Add mix-ins like mini chocolate chips, chopped nuts, or chia seeds for extra texture.
