Step-by-Step Instructions
  1. In a large pot over medium heat, melt 2 tablespoons of butter until creamy and bubbly, about 1 minute. Add chopped onion, diced celery, and sliced carrots, cooking for approximately 5 minutes until the vegetables soften and the onions turn translucent.
  2. Once the vegetables are softened, add 2 minced garlic cloves to the pot and stir frequently for about 1 minute until fragrant.
  3. Pour in 6 cups of low-sodium chicken broth, ensuring to scrape up any caramelized bits from the bottom of the pot. Toss in thyme sprigs and bring to a gentle boil. Reduce heat and let simmer for around 20 minutes.
  4. Stir in 1 cup of half-and-half, remove the thyme sprigs, and season with salt and pepper. Allow to warm for an additional 2 minutes.
  5. Incorporate 2 cups of shredded cooked chicken and 16 ounces of gnocchi into the simmering soup. Let it simmer for another 2-4 minutes.
  6. Stir in 2 cups of baby spinach and cook until wilted, about 1 to 2 minutes.
