  • 4 large eggs

  • 1.5 teaspoons Old Bay seasoning
  • Salt and freshly ground black pepper to taste

  • 4 cups cooked potatoes chopped (waxy or all-purpose)
  • 2 ounces ham diced
  • 1 cup shredded cheese sharp cheddar or Gruyère
For Garnish:

Method
 

Whisk the Eggs:
  1. In a bowl, whisk the eggs with cream, Old Bay seasoning, salt, and black pepper.
Sauté the Potatoes:
  1. Heat oil in a frying pan over medium-high heat.
  2. Add chopped potatoes and cook until golden brown.
Add the Ham:

Cook the Eggs:
  1. Reduce heat to low and pour in the egg mixture.
  2. Stir occasionally until eggs are soft and partially set.
Melt the Cheese:
  1. Sprinkle shredded cheese over the eggs.
  2. Cover the pan and cook until cheese melts and eggs are fully set.
