Add the chicken pieces to the skillet and season with garlic powder, onion powder, paprika, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
Add the broccoli, bell peppers, zucchini, and cherry tomatoes to the skillet. Stir well to combine.
Cook for an additional 5-7 minutes, or until the vegetables are tender but still crisp.
Sprinkle the dried Italian herbs over the mixture, if using, and squeeze the lemon juice on top. Stir to combine and cook for another minute.
Remove from heat and serve warm.
